I love St. Patrick’s Day! I have loved this day since I was a little girl, and found the magic of childhood locked up inside this neat little tale come to life with leprechauns, four leaf clovers, pots of gold, and that if you aren’t wearing green you just might get pinched! So much fun!

Several years ago I decided to do that Ancestry test to see where my blood lines come from, and wouldn’t you know this girl that grew up thinking she was about half Mexican and half German, is a whole slew of things, including one of which is 11% Irish! But let’s be honest even if I was hardly 1%, I’d still claim it!
I recently made these fun Chocolate Covered Cookie Lollipops for Valentine’s Day. You could literally make them year round. You don’t have to put sprinkles on them, and alternately you can dress them up in any variety of sprinkles for whatever occasion you wish. You could even get white chocolate and drizzle it across the semi-sweet chocolate for a fancy effect.
These are yummy, fun, and super easy, while also being pretty impressive. Because, I mean it’s not just a cookie, it’s a cookie dipped in chocolate, and all fancy sitting pretty on a stick!
A little note on making them. The chocolate version I used had plenty of cream in the sandwich part so there was no issue in sticking the lollipop stick through and having everything stay sandwich-like, however, in the vanilla version there wasn’t as much cream and I had to hold them together a bit before transferring to the wax lined cookie sheet for them to set. The great thing about this is that you can’t really mess them up. since the chocolate will set and harden acting like a glue, it’s not a huge deal.

Chocolate Covered Cookie Lollipops
Ingredients
- 1 packaged sandwich cream cookies (Oreo or allergy friendly version such as Great Value brand or Kinnickinnick)
- 1 10 oz package of Enjoy Life chocolate chips, or other friendly brand
- 1 tsp grapeseed or vegetable oil
- 6-8″ candy sticks
- sprinkles (optional)
Instructions

Using double boiler method, or microwave at :30 increments, stirring til smooth, melt together the chocolate and oil. Gently push the lollipop candy sticks through the center of each sandwich cookie.
Next, dip your cookies on a stick into the melted chocolate. You may spoon on melted chocolate to completely cover each cookie. Next, gently place the cookie on a wax paper covered cookie sheet. Immediately add sprinkles before chocolate begins to set. Then move onto the next cookie.
Once all cookies are dipped and have sprinkles, set them in your refrigerator for about 10-15 minutes, or up to about 20 minutes. Just until they are set. You will know by the hardened look of the chocolate coating, you can tap on it with your nail, and you can even tough with your finger tip. If you leave a fingerprint or nail print, it is not set yet. Once set, remove from fridge, and serve or display as needed.
Recipe Notes
If the cookies come apart due to not enough cream filling, just hold them together as best you can, the chocolate will end up working as an adhesive. I did this with vanilla sandwich cookies, and chocolate sandwich cookies. My chocolate cookies were fine and had plenty of filling, but the vanilla lacked filling. For the vanilla, in my case, where cream filling lacked, I used a spatula to hold the cookie and spoon chocolate over it, and then gently lay it on a wax covered sheet to set. Once set, it held together just fine.
