You guys!!! I just love it anytime I can make a recipe gluten free, vegan and top 8 free because it opens up doors for so many more people. As a food allergy mom, I know how awesome that is when you get your hands on a new “find”, or a new recipe that will work for your food allergy loved one!
These super spooky and fun eyeballs are all of those – gluten free, vegan and top 8 free!
Enjoy Life Brand
I used three different bases for the eyeballs. Two of which come from Enjoy Life’s Protein Bite line: Dipped Banana and Dark Raspberry.
The Gluten Free Bar Brand
The third is from a gluten free line that my husband loves (he’s our gluten intolerant one in the family), The Gluten Free Bar, also known as The GFB, and their Coconut Cashew Bites. I know that the latter are not nut or peanut free, however they are free of everything else, and we DO NOT feed them to our son as they were a special treat just for my husband and I to enjoy. Now while they are not peanut or tree nut free, they are gluten free, vegan, non-GMO, soy free and dairy free!
Semi-homemade for the Win!
These are super quick and easy as the main base for the recipe is a pre-made store bought product!

Gluten Free Allergy Friendly Halloween Eyeballs
Ingredients
- 1 16 oz package Vanilla Candy Quick or vegan, or other friendly white melting chocolate such as "No Whey" brand
- Enjoy Life Protein Bites any flavor
- The Gluten Free Bar Bites any flavor
- edible candy eyeballs I use Wilton brand
Instructions
Melting Your Chocolate

Using a double boiler or microwave, melt your chocolate until smooth. If using Candy Quick, heat for 30 second intervals, stirring well each time. If using another white chocolate, add 1 tsp oil for every pound of chocolate.
Dipping Your Bites

Using one fork, gently lay your bite in the chocolate, and then scoop chocolate on top until covered. Avoid trying to roll the bite as this will spread and melt the bite, discoloring the rest of your chocolate. Then lift the bite with fork, and gently tap on the edge of the bowl so that excess chocolate falls through the prongs back into bowl. Use a second fork to help gently slide the bite off the first fork, and onto wax paper covered cookie sheet. Immediately press a candy eyeball onto the chocolate covered bite before chocolate sets and hardens. Repeat with remaining bites. If using Candy Quick chocolate may began to completely set at room temperature, but if not you can put in fridge for about 15-20 minutes to help it set.
Recipe Notes
You can use any combination of bites that are safe for you (Enjoy Life, The Gluten Free Bar Bites). Each bag of bites typically will use about 1/2 lb of chocolate.
