Using Up Extra Ingredients
I hate throwing things away that are perfectly good to use for something else. We made some yummy Funfetti No Churn Ice Cream the other day using just 1/4 C of Funfetti Cake Mix. That left nearly the entire original amount of boxed mix to be used for something else.
Funfetti Cake Mix Waffles & Pancakes
Bring on the all the Funfetti Cake Mix Waffles & Pancakes! Are you more of a Team Waffle person, or a Team Pancake person? I really wanted to use our new Mickey Mouse waffle iron because our family is in love with all things Disney, so what could be more fun than Mickey Shaped allergy friendly food right at home?! And it’s Funfetti even!?!!?!!!
Micky Mouse Waffle Iron
Quick note on the Mickey Mouse waffle iron, I grabbed this cute guy on Amazon, and love it!!! The waffles are about the same size as those at Disneyland Resorts and Parks. They have traditional Belgian grid indentions which are all the more better for butter and syrup to be filled with. Just plug it in, let it warm up for about 5 minutes, use your fav waffle recipe. I just use my pancake recipes or even a boxed cake mix made as-is. You could even put brownie batter mix and other fun mixes in your waffle irons and they are yummy treats! It only takes about 3-4 minutes per waffle to heat and cook. My kids loved it so much!!!
Now onto the recipe. I used Betty Crocker Funfetti Cake mix with wheat and cross-contamination labeled for milk. The other ingredients are all standard e.g. flour, buttermilk, etc. and you can use your go-to subs or brands here.
Wheat & Gluten Friendly Option
If you are wheat or gluten free, you could easily use your go to flour blend and sub that for the flour and cake mix portion, still adding extra sprinkles to the mix. If you sub the flour AND cake mix, add 2 Tablespoons sugar and 1 teaspoon vanilla.
Dairy Friendly Option
If you are dairy free you can sub the buttermilk with your fav dairy sub OR you really could even use water. I have subbed water in my pancake and waffles many times when we can’t make it to the store, and they turn out just fine. If they seem a little runny with water or dairy sub, you can compensate with just a little extra flour blend. I would try adding no more than a couple tablespoons at a time until you reach the desired consistency.
Additionally, I used Betty Crocker and while it doesn’t contain milk, it is labeled as may contain for milk. In this instance, I’d recommend either subbing with flour as noted above for wheat/gluten OR sub your own safe cake mix such as Namaste that’s free of Top 8 in white or vanilla.

Funfetti Cake Mix Waffles & Pancakes
Ingredients
- 3/4 C flour
- 1 C Funfetti Boxed Cake Mix
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 2 C buttermilk
- 1/3 C sprinkles
Instructions

Heat griddle or waffle iron. Combine flour, cake mix, powder, soda, salt and whisk til well combined. Add eggs, buttermilk, and whisk til well combined. Fold in sprinkles. Cook on heated griddle or waffle iron til golden brown both sides. Serve warm with butter, syrup, whipped cream, chocolate or caramel sauce, or even with ice cream!
