One of the hardest things living with an anaphylactic allergy to garlic, is not being able to freely purchase premade ingredient staples. Gone are the days of stocking the pantry with products. Now we stock it with ingredients. We love to make tamales at least a couple times a year. Which we always use canned enchilada sauce to make the prep work a little easier prior to food allergies. While it is a labor of love to make tamales, this kitchen staple can bring amazing flavorful tamales and cut down on time!

This sauce is quick and easy, plus it works well in multiple recipes such as traditional enchiladas, or tamales! It whips up in just about 10 minutes, and you can double or even triple the quantities to achieve the desired amount needed for whatever recipe you are using it for.
Managing Celiac and Gluten Free with Multiple Food Allergies
My oldest is anaphylactic to peanut, pecan, garlic, and shellfish. This has changed over the years as he has both gained and lost allergies. In addition to managing his anaphylactic allergies, we also have our second youngest that is gluten free. It is amazing how much both garlic and gluten are in so many ingredients or store bought items. This recipe can be made with tradition all-purpose flour if you choose, but can easily be substituted with any equal measure for measure gluten free flour. We use Bobs Red Mill Measure for Measure because it is readily accessible at several stores in our area.

Allium Free Gluten Free Enchilada Sauce
Free from onion, garlic, and several top allergens as well as gluten.
Ingredients
- 1/4 C olive oil
- 1/4 C flour all-purpose or gluten free measure-for-measure
- 1/4 tsp cayenne pepper
- 3 tsp paprika
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 2 T tomato paste
- 2 C water can sub vegetable or meat broth if have on hand from allium free recipe
- 1 tsp apple cider vinegar
Instructions

In a large skillet warm the oil over medium heat and whisk in the flour until you have a nice thick paste.

Add in spices and slowly whisk in tomato paste and water. Continue to whisk away any lumps and bring sauce to a light simmer. Continue to whisk over medium heat until the sauce has thickened, and when a spoon is pulled from the sauce it will coat the back of the spoon.

Remove from heat and stir in the apple cider vinegar, add in more salt and pepper to taste.

Use this sauce in your favorite enchilada or tamale recipe.
