Garlic Free Enchilada Sauce Allium Free Gluten Free

Allium Free Gluten Free Enchilada Sauce

Free from onion, garlic, and several top allergens as well as gluten.

Ingredients

  • 1/4 C olive oil
  • 1/4 C flour all-purpose or gluten free measure-for-measure
  • 1/4 tsp cayenne pepper
  • 3 tsp paprika
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 2 T tomato paste
  • 2 C water can sub vegetable or meat broth if have on hand from allium free recipe
  • 1 tsp apple cider vinegar

Instructions

  1. In a large skillet warm the oil over medium heat and whisk in the flour until you have a nice thick paste.

  2. Add in spices and slowly whisk in tomato paste and water. Continue to whisk away any lumps and bring sauce to a light simmer. Continue to whisk over medium heat until the sauce has thickened, and when a spoon is pulled from the sauce it will coat the back of the spoon.

  3. Remove from heat and stir in the apple cider vinegar, add in more salt and pepper to taste.

  4. Use this sauce in your favorite enchilada or tamale recipe.
