Quick and Easy Gluten Free Bagels

They say necessity is the mother of invention. That couldn’t ring more true for the creation of these quick and easy gluten free bagels in my kitchen!

A combination of allergies and intolerances created the necessity that led to the bagels. My oldest is anaphylactic to multiple foods (peanut, pecan, shellfish, and garlic), my second oldest is dairy intolerant, and my second youngest is gluten intolerant.

We are still in the process of diagnosing potential Celiac. One of her favorite foods pre-gluten-intolerance, was bagels! In particular, chocolate chip bagels from Einstein Bros Bagels. She wasn’t the only one. My oldest was originally only allergic to peanut and shellfish and sadly added some allergens to his list, which included garlic. Garlic is seemingly in everything or cross-contact with nearly everything. He too used to enjoy Einsteins!

I have a recipe that is not only very similar to those drive-thru bagels, but also gluten free. Not to mention, a baked good, that’s gluten free AND easy!

Just Four Ingredients | Quick and Easy Gluten Free Bagels

One of my favorite things about this recipe is that there are minimal ingredients. Just grab your favorite gluten free measure-for-measure all-purpose flour, some Greek yogurt, baking powder and salt.

There is an optional egg wash, but if you have someone you care for that is allergic to egg, just skip that part and they are still delicious! Alternatively, I also provide a vegan egg wash. Totally up to you, but options are always great!

Dairy Intolerance and Baked Greek Yogurt

If you are allergic to dairy, I would recommend substituting with your favorite yogurt substitute, such as So Delicious vegan dairy-free yogurt. Since my child that is dairy intolerant is the only one with a dairy issue, we have found that she is okay with most baked goods. Additionally, for the dairy intolerance, because of the straining and fermentation of Greek yogurt, it has less lactose than other forms of milk such as ice cream, milk and traditional yogurt.

Plain or with Add-Ins

You can make these bagels plain with no add-ins, and it stands on its own in the most delicious way. You can add in shredded cheddar and jalapeño, chocolate chips, blueberries, or other yummy add-ins. One of my kids second favorite ways to have these, are plain with no add-ins, and instead we sprinkle cinnamon and sugar on top prior to baking.

How to Make Gluten Free Bagels

I have made my share of gluten free baked goods, and it’s not for the faint of heart. Gluten free baking can absolutely be done. However, for those that are novices in the kitchen, it can be extremely overwhelming. Heck, even if you are a master baker with traditional flour, gluten free is a whole new world. A whole new challenge.

The key to these is to not think of it as a traditional bread or bagel “dough”. Instead, think of it as a cookie dough, scone or biscuit, and you are shaping it to bake on the cookie sheet. The baking powder will be your best friend and give it the lift it needs to be more “bagel” as opposed to flat biscotti creation.

Best Fresh on Day of Baking

You can store these bagels for a few days, but the thing is, they are so delicious they probably won’t last that long. While you can store them in a ziplock bag, they really are the most delicious hot and fresh right out of the oven.

Make Gluten Free Bagels in 30 Just Minutes From Start to Finish

These are seriously so easy, I think you’re going to love them! Unlike traditional bagels, there is no rise time, no dipping in boiling water, etc. Just toss the 4-ingredients into the bowl, mix well, divide into 12 equal parts, shape and bake! That’s it!

Make it Vegan, Dairy and Egg Free

I do have a couple options for one of the main ingredients, as well as the optional egg wash. If you manage a dairy allergy to cows milk, you can sub a vegan yogurt such as So Delicious.

Additionally, if you cannot have egg due to egg allergy, but would like the “egg wash”, I also have a vegan egg wash! Yup, that’s right! Just grab some maple syrup along with either your go-to dairy sub or even water! I have shared this another time in my Gluten Free Pie Crust, and it’s amazing!

Gluten Free 4-Ingredient Bagels

Instructions

  1. Preheat oven to 375 degrees.

    Add gluten free flour, Greek yogurt, baking powder and salt into large bowl.

    *Optional: If you choose to include an add-in, such as chocolate chips, now is the time to do that.

    Combine just until mixed well.

    Use hands to shape into one large ball. Divide into 12 equal parts. Pat each portion into a 1" thick disc (about 4" diameter across).

    With a floured finger, create a hole in the center of the disc, shaping into a bagel.

    Place 4 rows of 3 on a large, parchment lined cookie sheet.

    *Optional: If you choose to do an egg wash, now is the time to do that. You can sub for the egg wash, if you manage an egg allergy, mixing 1 T maple syrup with 2 T of dairy free alternative, milk, or water. Whisk egg wash ingredients and brush on tops of bagels.

    *Optional: If you choose to have cinnamon sugar on top, add that on top of the egg wash at this point.

    Bake for 25-27 minutes or until the tops are golden brown and baked through, checking readiness with a toothpick.

    Slice in half and enjoy with your favorite bagel spread or as-is!
