Picky Eater
This is such a simple recipe, but my son that is anaphylactic to peanuts and shellfish is the pickiest eater ever. I came upon this when I was desperately trying to find ways to sneak fruits and vegetables into his diet.

So not only does this recipe have pumpkin in it, which is a great addition with fiber, potassium and vitamin C, but you can make this EASILY gluten-free AND top 8 free! We use Betty Crocker, Duncan Hines and Pillsbury with peanut and shellfish allergy. When we make it for my husband to also enjoy, we get a gluten and nut free brand like King Arthur or Pillsbury.

Vegan Options
So many people are looking for vegan options, and you can definitely find that with a cake mix such as Namaste. For example, the ingredients in their Gluten Free Top 8 Free Chocolate Cake Mix are: cane sugar, sweet brown rice flour, tapioca starch, cocoa (processed with alkali), arrowroot powder, rice milk powder, citrus fiber, baking soda, salt, cream of tartar.

Cake Mix Pumpkin Mini Muffins
Ingredients
- 1 standard size 15-17oz box of your favorite safe cake mix (vanilla, chocolate, devils food, or spice cake)
- 1 15 oz can of canned pumpkin
Instructions

Mix pumpkin and cake mix until just combined. Fill mini-muffin tins about 2/3 of the way full. Bake at 350 for about 14 minutes, or until toothpick comes out clean.
Recipe Notes
*Note: If you use Namaste they have a cake mix that is about 26oz to make two cakes, either use HALF the boxed cake mix to each can of pumpkin, OR use 2 cans of pumpkin for one box of their mix that is for 2 cakes.
