Double Stuffed Oreo Chocolate Chip Cookies

When world’s collide! Two of our fav cookies combined in one?! What could be better?! Oreo’s and homemade chocolate chip cookies in one – pure genius! So my personal all time favorite cookie is the snickerdoodle. I could eat them all. All. Day. Long! My peanut and shellfish allergic son also loves snickerdoodles. However, when I showed him this picture of the Double Stuffed Oreo Chocolate Chip Cookie, he agreed – we had to try it!

These are HUGE. I have 5 kids, aged 10 and under, and none of them could eat one whole cookie. So we went ahead and cut all of them in half. They are decadent and yummy!

Also, when you wrap and seal the cookie dough around the Oreo, it’s best to use a cookie dough scoop. Place one scoop on top of the Oreo and one on the bottom. Then gently push down until flattened like a sandwich, and then seal around edges.

This recipe makes 2 dozen. We delivered some to our neighbors, and they were so excited about this fun yumminess!

Double Stuffed Oreo Chocolate Chip Cookies

Ingredients

  • 2 sticks of salted softened butter
  • 3/4 C packed light brown sugar
  • 1 C granulated sugar
  • 2 eggs
  • 1 T vanilla
  • 3 1/2 C all-purpose flour
  • 2 tsp kosher salt
  • 1 tsp baking soda
  • 10 oz bag of chocolate chips Nestle 3 ingredient chips or Enjoy Life brand chips
  • 1 pkg Double Stuff Oreo Cookies regular can be subbed

Instructions

  1. Cream butter and sugars. Add eggs and vanilla and mix well. In a separate bowl combine flour, salt and soda. Whisk dry ingredients together well, and then stir into the wet ingredients. Fold in chocolate chips. Use two separate scoops of cookie dough to sandwich each Oreo. Seal the edges. Place 12 cookies to a sheet on parchment paper. Bake for 11-13 minutes at 350, or until golden brown. These are very large, and so we cut them in half for kids to enjoy. They would make really fun ice cream sandwiches!
