I really do enjoy feeding mine daily. I stopped making sourdough many months ago and my first starters were Lucy and Ethel. My new sourdough starter is affectionately known as Henry.
Feeding Your Sourdough Starter and What to Do with Discard
Henry is a happy bubbly healthy starter! I feed him about 1/4 of flour and water each feeding (twice a day), and even at that reduced amount, my discard bowl that I keep in the fridge tends to grow rather quickly.

I’ve made pancakes more times than I can count, pizza several times a week, bread, coffee cake and even a different cracker recipe.
Sourdough Crackers
This one is my favorite because it us a minimal ingredients and the results far outweigh any effort I put into it. Some of the other sourdough discard recipes can take a bit more work. This one is really so easy even a novice in the kitchen can win with this one!

Everything But the Bagel Seasoning
If you don’t have access to Everything But The Bagel Seasoning, which is available at most stores (even WalMart Great Value brand has one), I’ve also included a recipe for making your own seasoning! The recipe makes about a cup worth, so you’ll have extra to store and keep on-hand.
Wheat, Dairy and Sesame Allergy Substitutes
If you’re looking for an alternative to all-purpose flour, you can use any flour for your sourdough! Some people use mixtures blending more than one flour. So pick your favorite gluten free flour and use it!
Looking for a dairy free butter sub, I love Earth Balance brand. They have organic and soy free options as well!
Finally, I included a recipe within the recipe here, for the Everything But the Bagel seasoning. Make the seasoning as listed minus the sesame seeds! It will still be a great flavor minus those allergens!

Everything But the Bagel Sourdough Crackers
Ingredients
Sourdough Cracker Base
- 1 C Sourdough Starter Discard
- 1/4 C Salted Butter, melted
- 2 T Everything But the Bagel Seasoning
Everything But the Bagel Seasoning
- 3 T Garlic Flakes
- 3 T Onion Flakes
- 3 T Black Sesame Seeds
- 3 T Regular Sesame Seeds
- 2 T Poppy Seeds
- 1 T Sea Salt
Instructions

Mix sourdough discard with butter until well combined. Spread a thin layer on a parchment covered baking sheet. Evenly sprinkle Everything But the Bagel seasoning on top of sourdough layer. Bake at 350 for 10 minutes. Remove from oven and cut desired cracker shapes. Return to over and bake for an additional 22-27 minutes, or until a light golden brown.
