Okay friends, who loves Strawberry Shortcake?! Also, how many variations of Strawberry Shortcake have you tried, and which one is your favorite? Truth be told I’m not a huge cake fan. I’m more of a pie fan. However, I love Strawberry Shortcake – it’s one of my all time fav’s! That and Peach Cobbler in a Dutch Oven mmmmm mmmm good!

I have tried strawberry shortcake with more of a biscuit-type “cake”, with pound cake, and with angel food cake. My favorite is with angel food cake, but pound cake is a very close second place.
I have a bomb dot com recipe that you can whip up and easily make gluten free as well. Alternately, you can also use an allergy friendly boxed mix just as well.
You will notice when you mix the cake batter, it is very airy, light and fluffy.
You don’t have to make the angel food cake in a tube pan specially designed for this type of cake, although it is fun! You can alternately split the batter in half and bake in two bread loaf pans. You could also do it in muffin pans for individual servings.
For the whipped cream, you can whip up your own homemade whipped cream with 1 pint of heavy whipping cream to 3/4 cup powdered sugar and a tsp of vanilla. Alternately, you could do a semi-homemade approach and buy an allergy friendly can of whipped cream. There are several on the market now from Reddi-Whip that are almond, and coconut derived dairy free. So Delicious also has a coconut derived whipped cream tub.
For the strawberries, we oftentimes make these as a sweet side dish for our dinner. Just rinse and quarter your berries. Then add about 1-2 tablespoons of granulated sugar per lb of strawberries. Give them a good stir and let sit for about 15-20 minutes. Yum!
For the angel food cake, you can use cake flour, all-purpose flour doctored up with cornstarch, or even sub in gluten free measure for measure flour doctored up with cornstarch.
So many variations, and they all taste delicious and are perfect for Spring and Summer when you want a refreshing light dessert or treat!

Angel Food Cake Strawberry Shortcake
Ingredients
Homemade Angel Food Cake
- 1 1/4 cups cake flour
- 1 3/4 cups granulated sugar
- 1/2 tsp salt
- 1 tsp cream of tartar
- 1 tsp vanilla
- 1 1/2 cup egg whites takes about 10-11 eggs
Homemade Sugared Strawberries
- 2 lbs fresh whole strawberries, rinsed and quartered
- 1/4 cup granulated sugar
Homemade Whipped Cream
- 1 pint heavy whipping cream
- 1 tsp vanilla
- 3/4 cup powdered sugar
Cake Flour Recipe (If you don’t have Cake Flour on hand)
- 1 1/2 cup all-purpose flour or gluten free measure for measure flour
- 1/4 cup cornstarch
Semi Homemade Version
- 1 box angel food cake mix, prepared per box instructions
- 1 can whipped cream
- 2 lbs fresh whole strawberrries, rinsed and quartered
- 1/4 cup granulated sugar

If you would like to make your own cake flour combine 1 1/2 C all-purpose flour (or gluten free measure for measure flour) with 1/4 C cornstarch and mix well. Use this as your cake flour in the following recipe.
Combine the 1 1/4 cup cake flour, 1 3/4 cup sugar, salt, and cream of tartar. Mix well. Add the vanilla to the egg whites, and then add that mixture to the dry ingredients. Beat with an electric mixer for 30 seconds on high, and then on medium for one minute until airy light and fluffy.
Pour into an ungreased 10″ angel food cake tube pan, or into two bread loaf pans. Place the cake pan(s) into the cold oven, and then turn on to 325, do not place in preheated oven. Bake for about 55-65 minutes or until a deep golden brown, and not sticky to the touch. Turn the angel food cake upside down on a bottle to dry and cool down. Use a knife to loosen the edges before removing from the pan. Serve with whipped cream and strawberries.
Homemade Sugared Strawberries

Rinse and quarter the strawberries, removing the tops. Add sugar, give a good stir and let sit for about 15-20 minutes.
Homemade Whipped Cream

Pour the heavy whipping cream into a large bowl. Add sugar and vanilla. Beat on high with an electric mixer until peaks form.
Cake Flour DIY

Combine 1 1/2 C all purpose flour or gluten free measure for measure flour blend, with 1/4 C cornstarch and whisk together until combined well.
Semi Homemade Version

Follow instructions on box mix for angel food cake. Follow instructions above for sugared strawberries, and use canned whipped cream as is. Enjoy!

Girl! This looks so so so good! Strawberry shortcake is my fave. My grandma and I used to make it and eat on front porch when I was little. Has such a good memory attached to it as well!
ohhh. I have been looking for a good angel food cake recipes. I also love having it with fresh strawberries. It is the perfect dessert for hot summer days.
Like you, I’m also not a huge cake fan. My preferred way to eat strawberry shortcake is in ice cream form, like the novelty ones you get on a stick, lol. This cake sounds awesome though!
