My Family LOVES Ice Cream.
My son who is anaphylactic to peanuts and shellfish, especially enjoys this classic treat. One of the problems we have with ice cream, whether at an ice cream shop or pre-packaged from a store, is cross-contamination. People and manufacturer’s love them some peanuts and peanut butter, and they love it in their ice cream.
No Churn, No Ice Cream Maker, Ice Cream!
We have an electric ice cream maker, and I love it. It seriously is the creme de la creme of ice creams when you use that fancy contraption. I usually only use it when my husband is home to help though. I have 5 kids 10 and under, and it’s a lil bit cray-cray up in here to try to do that by myself.
Enter, no churn ice cream to save the day! Plus it’s so easy that the kids can actually help make it while I hold the baby. It’s a great way as homeschoolers for them to learn cooking basics, kitchen skills, and fractions or other math.
Allergy Friendly Options
I used Eagle Brand Sweetened Condensed Milk (contains milk); Land O Lakes Heavy Whipping Cream (contains milk); Betty Crocker Delights Super Moist Party Rainbow Chip Cake Mix (contains wheat, and may contain milk); Great Value Rainbow Decorating Sprinkles (contain soy). Of the top 8 allergens, using these ingredients the ice cream is free from peanut, tree nuts, egg, shellfish, fin fish. This could easily be made wheat and gluten free with a cake mix such as Namaste brand, and sprinkles such as Betty Crocker that are top 8 free, see my notes below the recipe.
Recipe and Using Leftover Ingredients
Without further ado, here is the recipe. Oh, and as the recipe only used 1/4 cup of the cake mix, save the rest for some Funfetti Pancakes. You could easily make this gluten-free by using your go to vanilla or white cake mix and adding about 1/4 cup of sprinkles to the box mix to make it “funfetti”.
Additionally, there will be leftover sweetened condensed milk with the measurements for this recipe and most standard size containers of sweetened condensed milk. If you have every had Hawaiian shaved ice with cream drizzled on top, they use sweetened condensed milk! Save it to drizzle on top of some homemade snow cones.
Funfetti No Churn Ice Cream
- 1 1/3 C Sweetened Condensed Milk
- 2 C heavy whipping cream
- 2 tsp vanilla
- 1/4 C Funfetti Cake Mix*
- 1/3 C Rainbow Decorating Sprinkles divided**
Using a hand mixer, whip the heavy whipping cream until peaks form. Add the sweetened condensed milk, vanilla, and dry cake mix batter. Mix until well combined. Gently fold in half the sprinkles (about 2 1/2 T). Pour into a bread loaf pan, or other freezer safe container. Evenly sprinkle the remaining sprinkles on top. Freeze for 6 hours or overnight.
*You can optionally use your go-to “safe” vanilla or white cake mix of choice and add 1/4 C sprinkles to mix. **Great Value (WalMart brand) has a small 2.7 oz container free of all but soy, and is equal to almost exactly 1/3 C needed.
