I love pumpkin almost as much as chocolate! There’s probably a million and one things you could do with pumpkin. Pumpkin pie, pumpkin waffles, pumpkin French Toast, pumpkin cookie dip … you know kind of like that movie Forrest Gump … “shrimp dip, shrimp gumbo, shrimp…”. Right?!

Now don’t get me wrong, I love all the baked and cooked things you can have pumpkin for breakfast, but sometimes with 5 kids homeschooling, I just don’t have time for that. Heck, it’s 10:05am as I write this and I’m in my pajamas with yesterday’s makeup.
Enter, Pumpkin Pie Smoothie to save the morning with all things pumpkin! This smoothie is quick, easy and yummy. Plus, it’s gluten free, vegan and top 8 free (except coconut for the milk).
Pumpkin Pie Smoothie
- 2 large Frozen bananas
- 1 1/2 cup Coconut milk
- 3/4 cup Pumpkin puree
- 2 tbs Maple syrup
- 2 tsp Pumpkin pie spice
- Dash cinnamon Options garnish
Add all ingredients except for the cinnamon to a blender. Mix til smooth and serve immediately wth a dash of cinnamon on top for garnish.
