Lunchtime Mac and Cheese
We are a homeschool family with food allergies. School lunches vary as opposed to a standard boxed or bagged lunch with sandwich. This can be a blessing and a curse. It’s great that we have more flexibility in what we eat since our lunches can be homemade and anything we’d like. However, as other homeschool mom’s will tell you we are dang tired just from teaching and wrangling the herd all morning that by lunchtime sometimes just a sandwich is all we have energy left for.
My kids are picky in addition to the food allergies we deal with. My son loves him a good Sunbutter and Marshmallow Fluff sandwich (so do I, do yourself a favor and try it… you’ll like it!). However, my kids also can’t have the same thing over and over again. So we have to switch it up or they boycott.
Allergy Friendly, Organic Goodness
One of my favorite go-to’s for lunch is Annie’s Mac and Cheese! It’s yummy. It’s quick. It’s organic. It’s allergy friendly. My kids love it! It is a little bit funny because I have one that will only eat the white cheddar, one that will only eat the classic mild cheddar, and then the other three like to mix both kinds in one bowl. With 5 kids 1 box isn’t enough for them anyways, so it all works out.
Peanut Free, Tree Nut Free, Nut Free… Lunch
Both the classic mild cheddar and the white cheddar, have wheat and milk. They are also both marked for cross-contamination with egg.
